Ingredients
| 2 cups | raw mangoes, peeled and grated |
| 1 cup | mustard seeds |
| 1 cup | vinegar |
| 5 cloves | garlic |
| 1 inch | ginger, chopped |
| 2 tablespoons | green chilies, chopped |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | salt |
| 2 tablespoons | sugar |
| 1 cup | mustard oil |
Instructions
- 1 Soak the mustard seeds in vinegar for at least 2 hours.
- 2 In a blender, combine soaked mustard seeds with vinegar, garlic, ginger, green chilies, turmeric powder, and salt.
- 3 Blend the mixture into a smooth paste.
- 4 In a pan, heat mustard oil until it reaches smoking point, then cool it slightly.
- 5 Add the grated raw mangoes and sugar to the mustard paste and mix well.
- 6 Gradually add the cooled mustard oil to the mixture while stirring continuously.
- 7 Transfer the Aam Kasundi to a clean, dry jar and let it mature for a few days before using.
Tips
For a smoother texture, strain the mustard paste before adding mangoes.
