Ingredients

2 cups raw mangoes, peeled and grated
1 cup mustard seeds
1 cup vinegar
5 cloves garlic
1 inch ginger, chopped
2 tablespoons green chilies, chopped
1 teaspoon turmeric powder
1 teaspoon salt
2 tablespoons sugar
1 cup mustard oil

Instructions

  1. 1 Soak the mustard seeds in vinegar for at least 2 hours.
  2. 2 In a blender, combine soaked mustard seeds with vinegar, garlic, ginger, green chilies, turmeric powder, and salt.
  3. 3 Blend the mixture into a smooth paste.
  4. 4 In a pan, heat mustard oil until it reaches smoking point, then cool it slightly.
  5. 5 Add the grated raw mangoes and sugar to the mustard paste and mix well.
  6. 6 Gradually add the cooled mustard oil to the mixture while stirring continuously.
  7. 7 Transfer the Aam Kasundi to a clean, dry jar and let it mature for a few days before using.

Tips

For a smoother texture, strain the mustard paste before adding mangoes.
