Raw green mango cooling drink — raw kairi (green mango) boiled, pulped, and blended with roasted cumin, black salt, mint, and sugar into a concentrate that is diluted with cold water to order. Intensely sour from the raw mango, cooling and electrolyte-replenishing. The essential North Indian summer drink, believed to prevent heat stroke. Sold at street stalls from April to June.

Ingredients
| 2 medium | raw green mangoes |
| 4 cups | water |
| 1 cup | sugar |
| 1 teaspoon | roasted cumin powder |
| 1 teaspoon | black salt |
| 1 teaspoon | black pepper powder |
| 1 handful | fresh mint leaves |
| — | ice cubes |
Instructions
- 1 Wash the raw green mangoes thoroughly and peel them.
- 2 Boil the peeled mangoes in 4 cups of water until they become soft and cooked through.
- 3 Once cooked, remove the mangoes from water and let them cool.
- 4 Extract the pulp from the cooled mangoes and discard the seeds.
- 5 In a blender, add the mango pulp, sugar, roasted cumin powder, black salt, black pepper powder, and fresh mint leaves.
- 6 Blend the mixture until smooth and uniform.
- 7 Add the reserved boiled water gradually to the mango mixture and blend again until well combined.
- 8 Adjust the consistency by adding more water if needed.
- 9 Refrigerate the Aam Panna for at least 1 hour before serving.
- 10 Serve chilled over ice cubes.
Tips
Adjust the sugar based on the sourness of the mangoes. You can also add a pinch of saffron for a unique flavor.
