Ingredients
| 2 cloves | garlic |
| 1 large | egg yolk |
| 1 cup | extra virgin olive oil |
| 1 tablespoon | lemon juice |

Instructions
- 1 Peel and finely mince the garlic cloves.
- 2 In a medium bowl, whisk together the minced garlic and egg yolk until well combined.
- 3 Begin adding the olive oil very slowly, a few drops at a time, while continuously whisking the mixture.
- 4 As the mixture begins to thicken, you can start adding the oil in a thin, steady stream, continuing to whisk vigorously.
- 5 Once all the oil is incorporated and the aioli is thick and creamy, whisk in the lemon juice.
- 6 Season the aioli with salt and freshly ground black pepper to taste.
- 7 Transfer the aioli to a serving dish or store it in an airtight container in the refrigerator until ready to use.
