Recipe

Prep: 15 min 2-3 servings

Ingredients

2 cloves garlic
1 large egg yolk
1 cup extra virgin olive oil
1 tablespoon lemon juice
salt to taste
freshly ground black pepper to taste

Instructions

  1. 1 Peel and finely mince the garlic cloves.
  2. 2 In a medium bowl, whisk together the minced garlic and egg yolk until well combined.
  3. 3 Begin adding the olive oil very slowly, a few drops at a time, while continuously whisking the mixture.
  4. 4 As the mixture begins to thicken, you can start adding the oil in a thin, steady stream, continuing to whisk vigorously.
  5. 5 Once all the oil is incorporated and the aioli is thick and creamy, whisk in the lemon juice.
  6. 6 Season the aioli with salt and freshly ground black pepper to taste.
  7. 7 Transfer the aioli to a serving dish or store it in an airtight container in the refrigerator until ready to use.

Tips

For a smoother aioli, ensure all ingredients are at room temperature before starting.
