Ingredients

2 tablespoons coconut oil
2 medium onions, thinly sliced
1 teaspoon salt
1 green chili, slit
1 teaspoon sugar
1 teaspoon vinegar
1 tablespoon coriander leaves, chopped

Instructions

  1. 1 Heat the coconut oil in a pan over medium heat.
  2. 2 Add the thinly sliced onions and sauté until they turn translucent.
  3. 3 Add the salt and slit green chili, and continue to sauté until the onions are golden brown.
  4. 4 Stir in the sugar and vinegar, mixing well to combine all the flavors.
  5. 5 Cook for another 2-3 minutes, ensuring the onions are well caramelized.
  6. 6 Garnish with chopped coriander leaves before serving.

Tips

For a spicier version, add more green chilies or a pinch of red chili powder.
