Ingredients

3 medium potatoes
2 tablespoons mustard oil
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon amchur (dried mango powder)
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Peel the potatoes and cut them into small cubes.
  2. 2 Heat mustard oil in a pan until it starts to smoke slightly.
  3. 3 Add cumin seeds and let them splutter.
  4. 4 Add the potato cubes and stir well to coat them with oil.
  5. 5 Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the potatoes.
  6. 6 Mix everything well and cover the pan with a lid.
  7. 7 Cook on low heat, stirring occasionally, until the potatoes are tender and cooked through.
  8. 8 Once cooked, sprinkle amchur powder and mix well.
  9. 9 Garnish with chopped fresh coriander leaves before serving.

Tips

For a more authentic flavor, use mustard oil and adjust the spices according to your taste preferences.
