Ingredients
| 250 grams | dried plums (Aloo Bukhara) |
| 1 cup | sugar |
| 1 cup | water |
| 1 teaspoon | red chili powder |
| 1/2 teaspoon | roasted cumin powder |
| 1/2 teaspoon | black salt |
| 1/2 teaspoon | salt |
| 1 teaspoon | ginger, finely grated |
| 1 tablespoon | vinegar |
| 1/2 teaspoon | garam masala |
Instructions
- 1 Rinse the dried plums thoroughly under running water.
- 2 In a saucepan, combine the dried plums, sugar, and water.
- 3 Bring the mixture to a boil over medium heat, stirring occasionally.
- 4 Once it starts boiling, reduce the heat to low and let it simmer for about 15-20 minutes until the plums are soft and the mixture thickens.
- 5 Add red chili powder, roasted cumin powder, black salt, salt, and grated ginger to the saucepan.
- 6 Stir well and let it cook for another 5 minutes to blend the flavors.
- 7 Add vinegar and garam masala to the chutney, stirring to combine.
- 8 Cook for an additional 2-3 minutes, then remove from heat.
- 9 Allow the chutney to cool before transferring it to a serving bowl.
Tips
For a richer flavor, let the chutney sit for a few hours before serving to allow the spices to fully infuse.
