Ingredients

250 grams dried plums (Aloo Bukhara)
1 cup sugar
1 cup water
1 teaspoon red chili powder
1/2 teaspoon roasted cumin powder
1/2 teaspoon black salt
1/2 teaspoon salt
1 teaspoon ginger, finely grated
1 tablespoon vinegar
1/2 teaspoon garam masala

Instructions

  1. 1 Rinse the dried plums thoroughly under running water.
  2. 2 In a saucepan, combine the dried plums, sugar, and water.
  3. 3 Bring the mixture to a boil over medium heat, stirring occasionally.
  4. 4 Once it starts boiling, reduce the heat to low and let it simmer for about 15-20 minutes until the plums are soft and the mixture thickens.
  5. 5 Add red chili powder, roasted cumin powder, black salt, salt, and grated ginger to the saucepan.
  6. 6 Stir well and let it cook for another 5 minutes to blend the flavors.
  7. 7 Add vinegar and garam masala to the chutney, stirring to combine.
  8. 8 Cook for an additional 2-3 minutes, then remove from heat.
  9. 9 Allow the chutney to cool before transferring it to a serving bowl.

Tips

For a richer flavor, let the chutney sit for a few hours before serving to allow the spices to fully infuse.
