Ingredients

3 medium potatoes
2 tablespoons mustard oil
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 cup green beans
1 teaspoon cumin seeds
2 cloves garlic
1 inch ginger
1 teaspoon salt
2 cups water
1 handful fresh coriander leaves

Instructions

  1. 1 Peel and cube the potatoes into bite-sized pieces.
  2. 2 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
  3. 3 Add cumin seeds and let them splutter.
  4. 4 Add finely chopped garlic and ginger, sauté until golden brown.
  5. 5 Add the potatoes and stir-fry for 5 minutes on medium heat.
  6. 6 Add turmeric powder, red chili powder, and salt. Mix well.
  7. 7 Add the green beans and stir-fry for another 3 minutes.
  8. 8 Pour in the water and bring to a boil.
  9. 9 Reduce the heat, cover, and let it simmer until the potatoes are tender and the water has evaporated.
  10. 10 Garnish with fresh coriander leaves before serving.

Tips

For a smokier flavor, allow the mustard oil to reach its smoking point before adding other ingredients.
