Ingredients
| 3 medium | potatoes |
| 2 tablespoons | mustard oil |
| 2 cloves | garlic |
| 3 | dried red chilies |
| 1 teaspoon | salt |
| 1 teaspoon | turmeric powder |
| 1 cup | water |
| 1 handful | fresh coriander leaves |
Instructions
- 1 Peel and cube the potatoes into small pieces.
- 2 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
- 3 Add the garlic cloves and dried red chilies, and sauté until the garlic is golden brown.
- 4 Add the cubed potatoes to the pan and stir well.
- 5 Add salt and turmeric powder, and mix to coat the potatoes evenly.
- 6 Pour in the water and cover the pan. Cook on medium heat until the potatoes are tender and the water has evaporated.
- 7 Mash the potatoes slightly with the back of a spoon to mix all the flavors.
- 8 Garnish with fresh coriander leaves before serving.
Tips
Adjust the number of dried red chilies to suit your spice preference.
