Ingredients

3 medium potatoes
2 tablespoons mustard oil
2 cloves garlic
3 dried red chilies
1 teaspoon salt
1 teaspoon turmeric powder
1 cup water
1 handful fresh coriander leaves

Instructions

  1. 1 Peel and cube the potatoes into small pieces.
  2. 2 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
  3. 3 Add the garlic cloves and dried red chilies, and sauté until the garlic is golden brown.
  4. 4 Add the cubed potatoes to the pan and stir well.
  5. 5 Add salt and turmeric powder, and mix to coat the potatoes evenly.
  6. 6 Pour in the water and cover the pan. Cook on medium heat until the potatoes are tender and the water has evaporated.
  7. 7 Mash the potatoes slightly with the back of a spoon to mix all the flavors.
  8. 8 Garnish with fresh coriander leaves before serving.

Tips

Adjust the number of dried red chilies to suit your spice preference.
