Ingredients
| 2 medium | potatoes |
| 1 cup | whole wheat flour |
| 2 tablespoons | ghee |
| 1 teaspoon | carom seeds (ajwain) |
| 1 teaspoon | cumin seeds |
| 1 | green chili, finely chopped |
| 1 teaspoon | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 | salt to taste |
| 1 cup | water |
| as needed | oil for frying |
Instructions
- 1 Boil the potatoes until tender, peel them, and mash them in a bowl.
- 2 Add whole wheat flour, ghee, carom seeds, cumin seeds, green chili, red chili powder, turmeric powder, coriander powder, and salt to the mashed potatoes.
- 3 Mix all the ingredients to form a dough. If needed, add a little water to bring the dough together.
- 4 Divide the dough into small portions and shape them into flat discs or thekua shapes.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Fry the shaped thekuas in batches until they are golden brown and crispy on both sides.
- 7 Remove the thekuas from the oil and drain on paper towels to remove excess oil.
- 8 Serve hot with your choice of chutney or yogurt.
Tips
Ensure the oil is hot enough before frying to prevent the thekuas from absorbing too much oil.
