Ingredients

2 medium potatoes
1 cup whole wheat flour
2 tablespoons ghee
1 teaspoon carom seeds (ajwain)
1 teaspoon cumin seeds
1 green chili, finely chopped
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 salt to taste
1 cup water
as needed oil for frying

Instructions

  1. 1 Boil the potatoes until tender, peel them, and mash them in a bowl.
  2. 2 Add whole wheat flour, ghee, carom seeds, cumin seeds, green chili, red chili powder, turmeric powder, coriander powder, and salt to the mashed potatoes.
  3. 3 Mix all the ingredients to form a dough. If needed, add a little water to bring the dough together.
  4. 4 Divide the dough into small portions and shape them into flat discs or thekua shapes.
  5. 5 Heat oil in a deep frying pan over medium heat.
  6. 6 Fry the shaped thekuas in batches until they are golden brown and crispy on both sides.
  7. 7 Remove the thekuas from the oil and drain on paper towels to remove excess oil.
  8. 8 Serve hot with your choice of chutney or yogurt.

Tips

Ensure the oil is hot enough before frying to prevent the thekuas from absorbing too much oil.
