Ingredients
| 2 medium | potatoes |
| 6 medium | pointed gourd (parwal) |
| 2 tablespoons | mustard oil |
| 1 teaspoon | panch phoron |
| 1 medium | onion, finely chopped |
| 1 teaspoon | ginger-garlic paste |
| 1 medium | tomato, chopped |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | cumin powder |
| 1 teaspoon | red chili powder |
| 1 cup | water |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Peel the potatoes and cut them into cubes.
- 2 Scrape the pointed gourd and cut into halves.
- 3 Heat mustard oil in a pan until it starts to smoke.
- 4 Add panch phoron and let it splutter.
- 5 Add chopped onions and sauté until golden brown.
- 6 Add ginger-garlic paste and sauté for a minute.
- 7 Add chopped tomatoes and cook until they soften.
- 8 Add turmeric, coriander, cumin, and red chili powders. Cook for another minute.
- 9 Add the potato and pointed gourd pieces. Mix well with the spices.
- 10 Add water and salt to taste. Stir well.
- 11 Cover and cook on low heat until the vegetables are tender and the gravy thickens.
- 12 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, you can add a pinch of garam masala at the end of cooking.
