Ingredients
| 3 medium | potatoes |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 8-10 | curry leaves |
| 2 tablespoons | chopped onions |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | salt |
| 1 tablespoon | chopped coriander leaves |
Instructions
- 1 Peel and dice the potatoes into small cubes.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add cumin seeds and asafoetida, stir for a few seconds.
- 5 Add curry leaves and chopped onions, sauté until onions are translucent.
- 6 Add the diced potatoes and stir well.
- 7 Sprinkle red chili powder, turmeric powder, and salt over the potatoes.
- 8 Mix everything well to coat the potatoes with the spices.
- 9 Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the potatoes are cooked and crispy.
- 10 Garnish with chopped coriander leaves before serving.
Tips
For a spicier version, add a few crushed garlic cloves along with the onions.
