Ingredients

Potato 3 medium Potato , peeled and cubed
oil 2 tablespoons Oil
Mustard Seed 1 teaspoon Mustard Seed
Cumin 1 teaspoon Cumin , seeds
asafoetida 1 pinch Asafoetida
Curry Leaf 8-10 Curry Leaf
Onion 2 tablespoons Onion , chopped
red chili powder 2 teaspoons Red chili powder
turmeric powder 1 teaspoon Turmeric powder
salt 1 teaspoon Salt
Cilantro 1 tablespoon Cilantro , chopped

Instructions

  1. 1 Peel and dice the potatoes into small cubes.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add cumin seeds and asafoetida, stir for a few seconds.
  5. 5 Add curry leaves and chopped onions, sauté until onions are translucent.
  6. 6 Add the diced potatoes and stir well.
  7. 7 Sprinkle red chili powder, turmeric powder, and salt over the potatoes.
  8. 8 Mix everything well to coat the potatoes with the spices.
  9. 9 Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the potatoes are cooked and crispy.
  10. 10 Garnish with chopped coriander leaves before serving.

Tips

For a spicier version, add a few crushed garlic cloves along with the onions.
