Ingredients

1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, chilled and diced
3 tablespoons ice water
2 cups thinly sliced, peeled apples
1/4 cup granulated sugar
1/4 cup packed brown sugar

Instructions

  1. 1 In a large bowl, combine 1 cup of flour and 1/2 teaspoon of salt.
  2. 2 Cut in 1/2 cup of chilled, diced butter until the mixture resembles coarse crumbs.
  3. 3 Stir in 3 tablespoons of ice water, a tablespoon at a time, until the dough comes together.
  4. 4 Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. 5 Preheat your oven to 425°F (220°C).
  6. 6 Roll out the dough on a floured surface to fit a 9-inch pie pan.
  7. 7 Place the rolled dough into the pie pan and trim the excess dough.
  8. 8 In a bowl, toss the sliced apples with lemon juice.
  9. 9 Mix 1/4 cup granulated sugar, 1/4 cup brown sugar, 1 tablespoon flour, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
  10. 10 Add the sugar mixture to the apples and toss to coat.
  11. 11 Pour the apple mixture into the prepared crust and dot with 1 tablespoon of butter.
  12. 12 Cover with a lattice crust or another rolled crust, sealing the edges.
  13. 13 Cut small slits in the top to allow steam to escape.
  14. 14 Bake in the preheated oven for 15 minutes.
  15. 15 Reduce the temperature to 350°F (175°C) and continue baking for 20-25 minutes until the apples are soft and the crust is golden brown.
  16. 16 Allow the pie to cool before serving.

Tips

For a glossy finish, brush the top crust with a beaten egg before baking.
