Ingredients
| 2 cups | puffed rice (Aralu) |
| 1 cup | jaggery |
| 1 tablespoon | ghee |
| 1 teaspoon | cardamom powder |
| 1 tablespoon | sesame seeds |
| 1 tablespoon | grated dry coconut |
| 1 tablespoon | chopped cashew nuts |
| 1 tablespoon | chopped almonds |
Instructions
- 1 Dry roast the sesame seeds and grated dry coconut separately until golden brown and set aside.
- 2 In a pan, heat ghee and roast the chopped cashew nuts and almonds until golden brown. Set aside.
- 3 In the same pan, add jaggery and a little water. Cook on low heat until the jaggery melts and forms a thick syrup.
- 4 Add cardamom powder to the jaggery syrup and mix well.
- 5 Add the puffed rice to the syrup and mix quickly to coat the puffed rice evenly.
- 6 Add the roasted sesame seeds, grated coconut, cashew nuts, and almonds to the mixture and combine well.
- 7 While the mixture is still warm, take small portions and shape them into thin, flat discs (peni) using your hands.
- 8 Allow the Aralu Peni to cool completely and store in an airtight container.
Tips
Ensure the jaggery syrup is thick enough to coat the puffed rice well, but not too hard to shape the peni.
