Ingredients
| 1 cup | raw rice |
| 1 cup | jaggery |
| 1 tablespoon | ghee |
| 1 teaspoon | cardamom powder |
| as needed | water |
| as needed | oil for deep frying |
Instructions
- 1 Wash the raw rice thoroughly and soak it in water for 4-5 hours.
- 2 Drain the water completely and spread the rice on a clean cloth to air dry for 30-45 minutes.
- 3 Grind the partially dried rice into a fine powder using a mixer grinder.
- 4 In a pan, add jaggery and a little water. Heat until the jaggery melts and forms a syrup of soft ball consistency.
- 5 Add cardamom powder and ghee to the jaggery syrup and mix well.
- 6 Slowly add the rice flour to the jaggery syrup, stirring continuously to form a dough-like consistency.
- 7 Allow the dough to cool slightly until it is easy to handle.
- 8 Divide the dough into small lemon-sized balls.
- 9 Grease a plastic sheet or banana leaf with ghee, and flatten each ball into a disc using your fingers.
- 10 Heat oil in a deep frying pan on medium heat.
- 11 Carefully slide the flattened discs into the hot oil and fry until they turn golden brown.
- 12 Remove the ariselu from the oil and drain the excess oil on paper towels.
Tips
Ensure the jaggery syrup reaches the right consistency to avoid ariselu becoming too hard or too soft.
