Ingredients
| 250 grams | dried pork |
| 1 tablespoon | mustard oil |
| 1 medium | onion, sliced |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 2 pieces | green chilies, slit |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 cup | water |
| — | salt to taste |
| 1 handful | fresh coriander leaves, chopped |
Instructions
- 1 Rinse the dried pork under running water to remove excess salt and impurities.
- 2 Cut the dried pork into bite-sized pieces.
- 3 Heat mustard oil in a pan over medium heat.
- 4 Add sliced onions and sauté until they turn golden brown.
- 5 Add minced garlic and ginger, and sauté for another minute until fragrant.
- 6 Add the dried pork pieces to the pan and stir-fry for about 5 minutes.
- 7 Add slit green chilies, turmeric powder, red chili powder, and salt to taste.
- 8 Pour in the water and bring it to a boil.
- 9 Reduce the heat to low, cover the pan, and let it simmer for 20-25 minutes or until the pork is tender.
- 10 Remove the lid and increase the heat to medium to evaporate any excess water.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a smokier flavor, you can roast the dried pork over an open flame before slicing.
