Ingredients

50 grams fresh ginger
3 green chillies
2 tablespoons mustard oil
1 teaspoon salt
1 teaspoon sugar
1 tablespoon lime juice

Instructions

  1. 1 Peel the ginger and cut it into small pieces.
  2. 2 Chop the green chillies into small pieces.
  3. 3 Heat mustard oil in a pan until it starts to smoke, then let it cool slightly.
  4. 4 In a blender, add the ginger, green chillies, salt, sugar, and lime juice.
  5. 5 Pour the cooled mustard oil into the blender.
  6. 6 Blend all the ingredients to a smooth paste.
  7. 7 Taste and adjust salt or lime juice if needed.
  8. 8 Transfer the chutney to a serving bowl.

Tips

For a milder chutney, remove the seeds from the chillies before blending.
