Avaraikkai Poriyal is a simple stir-fry made from broad beans, tempered with mustard seeds, urad dal, and curry leaves, and finished with grated coconut. It's a light and healthy side dish that pairs well with rice and sambar.

Ingredients
| 200 grams | Avaraikkai (Indian broad beans) |
| 2 tablespoons | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 1 pinch | asafoetida |
| 1 unit | dried red chili |
| 1 sprig | curry leaves |
| 0.25 cup | grated coconut |
| — | salt to taste |
Instructions
- 1 Wash the Avaraikkai thoroughly, trim the edges, and chop them into small pieces.
- 2 Heat coconut oil in a pan over medium heat.
- 3 Add mustard seeds and allow them to splutter.
- 4 Add urad dal and fry until golden brown.
- 5 Add asafoetida, dried red chili, and curry leaves, and sauté for a few seconds.
- 6 Add the chopped Avaraikkai and salt to taste, and stir well.
- 7 Cover the pan and cook on low heat for about 10-12 minutes, stirring occasionally, until the Avaraikkai is tender.
- 8 Add grated coconut and mix well.
- 9 Cook for another 2-3 minutes and turn off the heat.
Tips
For a spicier version, add a finely chopped green chili along with the curry leaves.
