Ingredients
| 1 cup | avarekalu (hyacinth beans) |
| 2 tablespoons | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 1 teaspoon | chana dal |
| 2 | dried red chilies |
| 1 pinch | asafoetida (hing) |
| 1 sprig | curry leaves |
| 1 cup | grated fresh coconut |
| 1 teaspoon | lemon juice |
| — | salt to taste |
| — | fresh coriander leaves for garnish |
Instructions
- 1 Rinse the avarekalu thoroughly and pressure cook with enough water until soft, about 2-3 whistles.
- 2 Drain and set aside the cooked beans.
- 3 Heat coconut oil in a pan over medium heat.
- 4 Add mustard seeds and let them splutter.
- 5 Add urad dal, chana dal, and fry until golden brown.
- 6 Add dried red chilies, asafoetida, and curry leaves, and sauté for a few seconds.
- 7 Add the cooked avarekalu to the pan and mix well.
- 8 Add grated coconut and salt to taste, and stir to combine.
- 9 Cook for another 2-3 minutes, allowing the flavors to meld.
- 10 Turn off the heat and add lemon juice.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, use freshly grated coconut and adjust the spice level by varying the number of red chilies.
