Ingredients

1 cup avarekalu (hyacinth beans)
2 tablespoons coconut oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon chana dal
2 dried red chilies
1 pinch asafoetida (hing)
1 sprig curry leaves
1 cup grated fresh coconut
1 teaspoon lemon juice
salt to taste
fresh coriander leaves for garnish

Instructions

  1. 1 Rinse the avarekalu thoroughly and pressure cook with enough water until soft, about 2-3 whistles.
  2. 2 Drain and set aside the cooked beans.
  3. 3 Heat coconut oil in a pan over medium heat.
  4. 4 Add mustard seeds and let them splutter.
  5. 5 Add urad dal, chana dal, and fry until golden brown.
  6. 6 Add dried red chilies, asafoetida, and curry leaves, and sauté for a few seconds.
  7. 7 Add the cooked avarekalu to the pan and mix well.
  8. 8 Add grated coconut and salt to taste, and stir to combine.
  9. 9 Cook for another 2-3 minutes, allowing the flavors to meld.
  10. 10 Turn off the heat and add lemon juice.
  11. 11 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, use freshly grated coconut and adjust the spice level by varying the number of red chilies.
