Ingredients

Pork 500 grams Pork , with skin
mustard oil 2 tablespoons Mustard oil
Panch Phoran 1 teaspoon Panch Phoran , Assamese five spice
Ginger 1 inch Ginger , grated
Garlic 5 cloves Garlic , minced
Onion 2 medium Onion , sliced
Bamboo Shoot 2 cups Bamboo Shoot , chopped
turmeric powder 2 teaspoons Turmeric powder
red chili powder 1 teaspoon Red chili powder
water 2 cups Water
salt Salt , to taste
Cilantro 2 tablespoons Cilantro , chopped

Instructions

  1. 1 Clean and cut the pork into medium-sized pieces.
  2. 2 Heat the mustard oil in a heavy-bottomed pan until it starts to smoke.
  3. 3 Add the panch phoran and let it splutter.
  4. 4 Add the grated ginger and minced garlic, sauté until fragrant.
  5. 5 Add the sliced onions and sauté until they turn golden brown.
  6. 6 Add the pork pieces and stir-fry on high heat until they are browned.
  7. 7 Add the chopped bamboo shoot, turmeric powder, red chili powder, and salt.
  8. 8 Mix well and add water to cover the pork.
  9. 9 Bring to a boil, then reduce the heat and let it simmer until the pork is tender and the water has reduced to a thick gravy.
  10. 10 Garnish with fresh coriander leaves before serving.

Tips

For a more authentic taste, use fresh bamboo shoot if available.
