Ingredients
| 500 grams | pork with skin |
| 2 tablespoons | mustard oil |
| 1 teaspoon | panch phoran |
| 1 inch | ginger, grated |
| 5 cloves | garlic, minced |
| 2 medium | onions, sliced |
| 2 cups | bamboo shoot, chopped |
| 2 teaspoons | turmeric powder |
| 1 teaspoon | red chili powder |
| 2 cups | water |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Clean and cut the pork into medium-sized pieces.
- 2 Heat the mustard oil in a heavy-bottomed pan until it starts to smoke.
- 3 Add the panch phoran and let it splutter.
- 4 Add the grated ginger and minced garlic, sauté until fragrant.
- 5 Add the sliced onions and sauté until they turn golden brown.
- 6 Add the pork pieces and stir-fry on high heat until they are browned.
- 7 Add the chopped bamboo shoot, turmeric powder, red chili powder, and salt.
- 8 Mix well and add water to cover the pork.
- 9 Bring to a boil, then reduce the heat and let it simmer until the pork is tender and the water has reduced to a thick gravy.
- 10 Garnish with fresh coriander leaves before serving.
Tips
For a more authentic taste, use fresh bamboo shoot if available.
