Ingredients

2 cups whole wheat flour
1 cup ghee

1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon amchur (dried mango powder)

Instructions

  7. 7 Add minced garlic and grated ginger, sauté for a minute.
  8. 8 Add chopped onions and cook until translucent.
  9. 9 Mix in mashed potatoes, roasted eggplant, red chili powder, turmeric powder, and salt.
  10. 10 Cook for 5 minutes, then add amchur and chopped coriander leaves. Mix well.

Tips

For a smoky flavor, roast the eggplant directly on an open flame before mashing.
