Ingredients
| 2 cups | whole wheat flour |
| 1 cup | ghee |
| 1 teaspoon | carom seeds |
| — | salt to taste |
| 1 cup | boiled and mashed potatoes |
| 1 cup | roasted eggplant, mashed |
| 1 medium | onion, finely chopped |
| 2 tablespoons | mustard oil |
| 2 tablespoons | coriander leaves, chopped |
| 2 cloves | garlic, minced |
| 1 teaspoon | ginger, grated |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | amchur (dried mango powder) |
Instructions
- 1 In a bowl, mix whole wheat flour, carom seeds, and salt. Add ghee and mix until crumbly.
- 2 Gradually add water and knead into a firm dough. Let it rest for 15 minutes.
- 3 Divide the dough into equal portions and shape them into balls (baatis).
- 4 Preheat the oven to 375°F (190°C).
- 5 Place the baatis on a baking tray and bake for 25-30 minutes until golden brown, turning them occasionally.
- 6 For chokha, heat mustard oil in a pan and add cumin seeds.
- 7 Add minced garlic and grated ginger, sauté for a minute.
- 8 Add chopped onions and cook until translucent.
- 9 Mix in mashed potatoes, roasted eggplant, red chili powder, turmeric powder, and salt.
- 10 Cook for 5 minutes, then add amchur and chopped coriander leaves. Mix well.
- 11 Serve the hot baatis with chokha on the side.
Tips
For a smoky flavor, roast the eggplant directly on an open flame before mashing.
