Ingredients

Eggplant 2 medium Eggplant , small
mustard oil 1 tablespoon Mustard oil
Cumin 1 teaspoon Cumin , seeds
Onion 1 cup Onion , finely chopped
Tomato 1 cup Tomato , finely chopped
ginger-garlic paste 2 teaspoons Ginger-garlic paste
red chili powder 2 teaspoons Red chili powder
turmeric powder 1 teaspoon Turmeric powder
coriander powder 1 teaspoon Coriander powder
garam masala 1 teaspoon Garam masala
salt Salt , to taste
Cilantro 2 tablespoons Cilantro , chopped, fresh

Instructions

  1. 1 Roast the eggplants directly over an open flame until the skin is charred and the flesh is soft.
  2. 2 Allow the roasted eggplants to cool, then peel off the charred skin and mash the flesh.
  3. 3 Heat mustard oil in a pan and add cumin seeds. Let them splutter.
  4. 4 Add the chopped onions and sauté until they turn golden brown.
  5. 5 Stir in the ginger-garlic paste and sauté for another minute.
  6. 6 Add the chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil separates.
  7. 7 Mix in the mashed eggplant and cook for 5-7 minutes, allowing the flavors to blend.
  8. 8 Sprinkle garam masala and stir well.
  9. 9 Garnish with fresh coriander leaves before serving.
