Ingredients
| 2 medium | eggplants (baigan) |
| 1 tablespoon | mustard oil |
| 1 teaspoon | cumin seeds |
| 1 cup | finely chopped onions |
| 1 cup | finely chopped tomatoes |
| 2 teaspoons | ginger-garlic paste |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| — | salt to taste |
| 2 tablespoons | chopped fresh coriander leaves |
Instructions
- 1 Roast the eggplants directly over an open flame until the skin is charred and the flesh is soft.
- 2 Allow the roasted eggplants to cool, then peel off the charred skin and mash the flesh.
- 3 Heat mustard oil in a pan and add cumin seeds. Let them splutter.
- 4 Add the chopped onions and sauté until they turn golden brown.
- 5 Stir in the ginger-garlic paste and sauté for another minute.
- 6 Add the chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil separates.
- 7 Mix in the mashed eggplant and cook for 5-7 minutes, allowing the flavors to blend.
- 8 Sprinkle garam masala and stir well.
- 9 Garnish with fresh coriander leaves before serving.
Tips
Roasting the eggplants over an open flame gives the dish a smoky flavor, which is characteristic of traditional Baigan Bharta.
