Ingredients

250 grams baimbale (bamboo shoots)
1 medium onion, finely chopped
2 tablespoons coconut oil
1 teaspoon mustard seeds
1 teaspoon turmeric powder
2 teaspoons red chili powder
1 teaspoon coriander powder
1 cup freshly grated coconut
2 tablespoons tamarind pulp
salt to taste
1 cup water
1 sprig curry leaves

Instructions

  1. 1 Peel and slice the bamboo shoots thinly, then soak them in water for 24 hours, changing the water at least twice to remove bitterness.
  2. 2 Drain the bamboo shoots and rinse them thoroughly.
  3. 3 Heat coconut oil in a pan over medium heat and add mustard seeds. Allow them to splutter.
  4. 4 Add the chopped onion and curry leaves, and sauté until the onions turn translucent.
  5. 5 Add turmeric powder, red chili powder, and coriander powder, and sauté for a minute.
  6. 6 Add the bamboo shoots and stir well to coat them with the spices.
  7. 7 Add tamarind pulp, salt, and water, and mix well.
  8. 8 Cover and cook on low heat for about 20 minutes or until the bamboo shoots are tender.
  9. 9 Add the grated coconut, mix well, and cook for another 5 minutes.
  10. 10 Adjust seasoning if necessary and serve hot.

Tips

Ensure to soak the bamboo shoots adequately to reduce bitterness. Fresh bamboo shoots are preferred for the best taste.
