Ingredients
| 250 grams | baimbale (bamboo shoots) |
| 1 medium | onion, finely chopped |
| 2 tablespoons | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | turmeric powder |
| 2 teaspoons | red chili powder |
| 1 teaspoon | coriander powder |
| 1 cup | freshly grated coconut |
| 2 tablespoons | tamarind pulp |
| — | salt to taste |
| 1 cup | water |
| 1 sprig | curry leaves |
Instructions
- 1 Peel and slice the bamboo shoots thinly, then soak them in water for 24 hours, changing the water at least twice to remove bitterness.
- 2 Drain the bamboo shoots and rinse them thoroughly.
- 3 Heat coconut oil in a pan over medium heat and add mustard seeds. Allow them to splutter.
- 4 Add the chopped onion and curry leaves, and sauté until the onions turn translucent.
- 5 Add turmeric powder, red chili powder, and coriander powder, and sauté for a minute.
- 6 Add the bamboo shoots and stir well to coat them with the spices.
- 7 Add tamarind pulp, salt, and water, and mix well.
- 8 Cover and cook on low heat for about 20 minutes or until the bamboo shoots are tender.
- 9 Add the grated coconut, mix well, and cook for another 5 minutes.
- 10 Adjust seasoning if necessary and serve hot.
Tips
Ensure to soak the bamboo shoots adequately to reduce bitterness. Fresh bamboo shoots are preferred for the best taste.
