Ingredients

1 cup bajra (pearl millet) flour
2 medium potatoes, boiled and mashed
1 small onion, finely chopped
1 teaspoon cumin seeds
1 teaspoon carom seeds (ajwain)
1 teaspoon red chili powder
1 teaspoon garam masala
salt to taste
water as needed
ghee or oil for cooking

Instructions

  1. 1 In a large mixing bowl, combine the bajra flour, mashed potatoes, chopped onion, cumin seeds, carom seeds, red chili powder, garam masala, and salt.
  2. 2 Mix the ingredients well and gradually add water to form a soft dough.
  3. 3 Divide the dough into small balls, about the size of a lemon.
  4. 4 Flatten each ball between your palms and gently roll it out into a thick roti using a rolling pin, dusting with dry flour as needed.
  5. 5 Heat a tawa or flat pan over medium heat.
  6. 6 Place the rolled roti on the hot tawa and cook for about 1-2 minutes on each side until small brown spots appear.
  7. 7 Apply ghee or oil on both sides of the roti and cook until it is golden and crisp.
  8. 8 Repeat the process with the remaining dough balls.
  9. 9 Serve hot with yogurt or pickle.

Tips

Ensure the dough is soft and pliable for easier rolling. If the dough cracks, add a little more water.
