Ingredients
| 1 cup | bajra (pearl millet) flour |
| 2 medium | potatoes, boiled and mashed |
| 1 small | onion, finely chopped |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | carom seeds (ajwain) |
| 1 teaspoon | red chili powder |
| 1 teaspoon | garam masala |
| — | salt to taste |
| — | water as needed |
| — | ghee or oil for cooking |
Instructions
- 1 In a large mixing bowl, combine the bajra flour, mashed potatoes, chopped onion, cumin seeds, carom seeds, red chili powder, garam masala, and salt.
- 2 Mix the ingredients well and gradually add water to form a soft dough.
- 3 Divide the dough into small balls, about the size of a lemon.
- 4 Flatten each ball between your palms and gently roll it out into a thick roti using a rolling pin, dusting with dry flour as needed.
- 5 Heat a tawa or flat pan over medium heat.
- 6 Place the rolled roti on the hot tawa and cook for about 1-2 minutes on each side until small brown spots appear.
- 7 Apply ghee or oil on both sides of the roti and cook until it is golden and crisp.
- 8 Repeat the process with the remaining dough balls.
- 9 Serve hot with yogurt or pickle.
Tips
Ensure the dough is soft and pliable for easier rolling. If the dough cracks, add a little more water.
