Ingredients

2 cups bajra flour (pearl millet flour)
1 cup hot water
salt to taste
oil for cooking

Instructions

  1. 1 In a large bowl, mix the bajra flour and salt together.
  2. 2 Gradually add hot water to the flour while mixing with a spoon or spatula until it forms a soft dough.
  3. 3 Knead the dough gently for a few minutes until it is smooth and pliable.
  4. 4 Divide the dough into small balls, about the size of a lemon.
  5. 5 Take a ball of dough and flatten it slightly between your palms.
  6. 6 On a clean surface or rolling board, gently pat the dough into a thin, round rotti using your fingers or a rolling pin.
  7. 7 Heat a tawa or flat pan over medium heat and lightly grease it with oil.
  8. 8 Place the rotti on the hot tawa and cook for about 1-2 minutes on each side, until small brown spots appear and it is cooked through.
  9. 9 Repeat the process with the remaining dough balls.
  10. 10 Serve hot with chutney, curry, or yogurt.

Tips

Ensure the water is hot when mixing with the flour to help bind the dough better.
