Ingredients
| 1 cup | bajra (pearl millet) flour |
| 1 cup | boiled and mashed potatoes |
| 1 small | onion, finely chopped |
| 1 teaspoon | ginger paste |
| 1 teaspoon | green chili paste |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | carom seeds (ajwain) |
| 1 teaspoon | red chili powder |
| 1 teaspoon | garam masala |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
| — | oil for shallow frying |
Instructions
- 1 In a large mixing bowl, combine bajra flour, boiled and mashed potatoes, chopped onion, ginger paste, and green chili paste.
- 2 Add cumin seeds, carom seeds, red chili powder, garam masala, and salt to the mixture.
- 3 Mix all the ingredients thoroughly to form a dough. If the dough is too dry, add a little water.
- 4 Divide the dough into small portions and shape each portion into a flat, round tikki.
- 5 Heat oil in a pan over medium heat for shallow frying.
- 6 Place the tikkis in the pan and cook until golden brown and crisp on both sides.
- 7 Remove the tikkis from the pan and drain excess oil on paper towels.
- 8 Garnish with fresh coriander leaves and serve hot.
Tips
Serve with green chutney or yogurt for a refreshing accompaniment.
