Ingredients

1 cup bajra (pearl millet) flour
1 cup boiled and mashed potatoes
1 small onion, finely chopped
1 teaspoon ginger paste
1 teaspoon green chili paste
1 teaspoon cumin seeds
1 teaspoon carom seeds (ajwain)
1 teaspoon red chili powder
1 teaspoon garam masala
salt to taste
2 tablespoons fresh coriander leaves, chopped
oil for shallow frying

Instructions

  1. 1 In a large mixing bowl, combine bajra flour, boiled and mashed potatoes, chopped onion, ginger paste, and green chili paste.
  2. 2 Add cumin seeds, carom seeds, red chili powder, garam masala, and salt to the mixture.
  3. 3 Mix all the ingredients thoroughly to form a dough. If the dough is too dry, add a little water.
  4. 4 Divide the dough into small portions and shape each portion into a flat, round tikki.
  5. 5 Heat oil in a pan over medium heat for shallow frying.
  6. 6 Place the tikkis in the pan and cook until golden brown and crisp on both sides.
  7. 7 Remove the tikkis from the pan and drain excess oil on paper towels.
  8. 8 Garnish with fresh coriander leaves and serve hot.

Tips

Serve with green chutney or yogurt for a refreshing accompaniment.
