Ingredients

250 grams ground beef
50 grams tapioca flour
1 teaspoon salt
0.5 teaspoon white pepper
1 clove garlic, minced
1 liter beef broth
1 tablespoon fried shallots
1 tablespoon soy sauce
1 tablespoon chopped scallions
1 tablespoon fried garlic
noodles, cooked
bok choy, blanched
salt to taste

Instructions

  1. 1 In a bowl, mix ground beef, tapioca flour, salt, white pepper, minced garlic, and egg until well combined.
  2. 2 Shape the mixture into small balls, about 2 cm in diameter.
  3. 3 Bring beef broth to a boil in a large pot.
  4. 4 Gently drop the meatballs into the boiling broth and cook until they float to the surface, about 5-7 minutes.
  5. 5 Reduce the heat and let the meatballs simmer for an additional 5 minutes.
  6. 6 In serving bowls, place cooked noodles and blanched bok choy.
  7. 7 Ladle the hot broth and meatballs over the noodles and bok choy.
  8. 8 Garnish with fried shallots, soy sauce, chopped scallions, and fried garlic.
  9. 9 Adjust seasoning with additional salt if needed.

Tips

For a richer flavor, add a dash of sesame oil to the broth before serving.
