Ingredients
| 250 grams | ground beef |
| 50 grams | tapioca flour |
| 1 teaspoon | salt |
| 0.5 teaspoon | white pepper |
| 1 clove | garlic, minced |
| 1 liter | beef broth |
| 1 tablespoon | fried shallots |
| 1 tablespoon | soy sauce |
| 1 tablespoon | chopped scallions |
| 1 tablespoon | fried garlic |
| — | noodles, cooked |
| — | bok choy, blanched |
| — | salt to taste |
Instructions
- 1 In a bowl, mix ground beef, tapioca flour, salt, white pepper, minced garlic, and egg until well combined.
- 2 Shape the mixture into small balls, about 2 cm in diameter.
- 3 Bring beef broth to a boil in a large pot.
- 4 Gently drop the meatballs into the boiling broth and cook until they float to the surface, about 5-7 minutes.
- 5 Reduce the heat and let the meatballs simmer for an additional 5 minutes.
- 6 In serving bowls, place cooked noodles and blanched bok choy.
- 7 Ladle the hot broth and meatballs over the noodles and bok choy.
- 8 Garnish with fried shallots, soy sauce, chopped scallions, and fried garlic.
- 9 Adjust seasoning with additional salt if needed.
Tips
For a richer flavor, add a dash of sesame oil to the broth before serving.
