Ingredients
| 150 grams | vermicelli noodles |
| 2 tablespoons | ghee |
| 3 tablespoons | sugar |
| 1 teaspoon | ground cardamom |
| 1 pinch | saffron threads |
| 2 tablespoons | rose water |
| 3 | eggs |
| 1 tablespoon | vegetable oil |
| — | salt to taste |
Instructions
- 1 Boil water in a pot and add the vermicelli noodles. Cook until just tender, then drain and set aside.
- 2 In a large pan, melt the ghee over medium heat. Add the cooked vermicelli and stir to coat.
- 3 Sprinkle the sugar, ground cardamom, and saffron threads over the vermicelli. Stir well to combine.
- 4 Add the rose water and continue to cook for another 2-3 minutes, allowing the flavors to meld.
- 5 In a separate bowl, beat the eggs with a pinch of salt.
- 6 In a non-stick pan, heat the vegetable oil over medium heat. Pour in the beaten eggs to make an omelette.
- 7 Cook the omelette until set, then gently fold or roll it and remove from the pan.
- 8 Serve the sweetened vermicelli on a plate, topped with slices of the omelette.
Tips
For a richer flavor, you can add a few drops of orange blossom water along with the rose water.
