Ingredients

150 grams vermicelli noodles
2 tablespoons ghee
3 tablespoons sugar
1 teaspoon ground cardamom
1 pinch saffron threads
2 tablespoons rose water
3 eggs
1 tablespoon vegetable oil
salt to taste

Instructions

  1. 1 Boil water in a pot and add the vermicelli noodles. Cook until just tender, then drain and set aside.
  2. 2 In a large pan, melt the ghee over medium heat. Add the cooked vermicelli and stir to coat.
  3. 3 Sprinkle the sugar, ground cardamom, and saffron threads over the vermicelli. Stir well to combine.
  4. 4 Add the rose water and continue to cook for another 2-3 minutes, allowing the flavors to meld.
  5. 5 In a separate bowl, beat the eggs with a pinch of salt.
  6. 6 In a non-stick pan, heat the vegetable oil over medium heat. Pour in the beaten eggs to make an omelette.
  7. 7 Cook the omelette until set, then gently fold or roll it and remove from the pan.
  8. 8 Serve the sweetened vermicelli on a plate, topped with slices of the omelette.

Tips

For a richer flavor, you can add a few drops of orange blossom water along with the rose water.
