Ingredients
| 200 grams | fresh bamboo shoots |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 2 tablespoons | mustard oil |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| — | salt to taste |
| 2 tablespoons | coriander leaves, chopped |
Instructions
- 1 Clean the fresh bamboo shoots thoroughly and slice them thinly.
- 2 Boil the sliced bamboo shoots in water for about 10 minutes to remove any bitterness, then drain and set aside.
- 3 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
- 4 Add chopped onions to the pan and sauté until they turn golden brown.
- 5 Add minced garlic and ginger to the onions and sauté for another minute until fragrant.
- 6 Add turmeric powder, red chili powder, and salt to the pan, and stir well.
- 7 Add the boiled bamboo shoots to the pan and mix well with the spices.
- 8 Fry the bamboo shoots on medium heat for about 10-15 minutes, stirring occasionally, until they are well cooked and slightly crispy.
- 9 Garnish with chopped coriander leaves before serving.
Tips
Ensure the mustard oil is properly heated to reduce its pungency and enhance the flavor of the dish.
