Ingredients

200 grams fresh bamboo shoots
1 medium onion, finely chopped
2 cloves garlic, minced
1 inch ginger, minced
2 tablespoons mustard oil
1 teaspoon turmeric powder
1 teaspoon red chili powder
salt to taste
2 tablespoons coriander leaves, chopped

Instructions

  1. 1 Clean the fresh bamboo shoots thoroughly and slice them thinly.
  2. 2 Boil the sliced bamboo shoots in water for about 10 minutes to remove any bitterness, then drain and set aside.
  3. 3 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
  4. 4 Add chopped onions to the pan and sauté until they turn golden brown.
  5. 5 Add minced garlic and ginger to the onions and sauté for another minute until fragrant.
  6. 6 Add turmeric powder, red chili powder, and salt to the pan, and stir well.
  7. 7 Add the boiled bamboo shoots to the pan and mix well with the spices.
  8. 8 Fry the bamboo shoots on medium heat for about 10-15 minutes, stirring occasionally, until they are well cooked and slightly crispy.
  9. 9 Garnish with chopped coriander leaves before serving.

Tips

Ensure the mustard oil is properly heated to reduce its pungency and enhance the flavor of the dish.
