200 grams fresh bamboo shoots
1 medium onion, finely sliced
2 tablespoons mustard oil
1 teaspoon red chili powder
1 teaspoon turmeric powder
2 tablespoons coriander leaves, chopped
1 lemon, juiced
salt to taste

  2. 2 Boil the bamboo shoots in water for about 15 minutes to remove any bitterness.
  3. 3 Drain the water and rinse the bamboo shoots in cold water.
  4. 4 In a bowl, combine the boiled bamboo shoots, sliced onion, mustard oil, red chili powder, turmeric powder, and salt.
  5. 5 Mix well to ensure the bamboo shoots are evenly coated with the spices.
