Ingredients
| 2 cups | all-purpose flour |
| 1/4 cup | ghee |
| 1/2 cup | sugar |
| 1/4 teaspoon | baking soda |
| 1/4 teaspoon | cardamom powder |
| — | water as needed |
| — | oil for deep frying |
Instructions
- 1 In a large bowl, combine the all-purpose flour, ghee, and baking soda.
- 2 Mix well until the mixture resembles breadcrumbs.
- 3 Gradually add water and knead into a firm dough. Cover and let it rest for 15 minutes.
- 4 Divide the dough into small portions and roll each into a ball.
- 5 Flatten each ball slightly and make a small indentation in the center with your thumb.
- 6 Heat oil in a deep frying pan over medium heat.
- 7 Fry the dough pieces in batches until they are golden brown and crisp.
- 8 Remove from oil and drain on paper towels.
- 9 In a separate pan, dissolve sugar in a little water over low heat to make a thick syrup.
- 10 Add cardamom powder to the syrup and mix well.
- 11 Dip the fried dough pieces in the syrup, ensuring they are well coated.
- 12 Remove and let them cool on a plate before serving.
Tips
Ensure the oil is not too hot to prevent the Khurma from browning too quickly without cooking through.
