Ingredients

2 cups all-purpose flour
1/4 cup ghee
1/2 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon cardamom powder
water as needed
oil for deep frying

Instructions

  1. 1 In a large bowl, combine the all-purpose flour, ghee, and baking soda.
  2. 2 Mix well until the mixture resembles breadcrumbs.
  3. 3 Gradually add water and knead into a firm dough. Cover and let it rest for 15 minutes.
  4. 4 Divide the dough into small portions and roll each into a ball.
  5. 5 Flatten each ball slightly and make a small indentation in the center with your thumb.
  6. 6 Heat oil in a deep frying pan over medium heat.
  7. 7 Fry the dough pieces in batches until they are golden brown and crisp.
  8. 8 Remove from oil and drain on paper towels.
  9. 9 In a separate pan, dissolve sugar in a little water over low heat to make a thick syrup.
  10. 10 Add cardamom powder to the syrup and mix well.
  11. 11 Dip the fried dough pieces in the syrup, ensuring they are well coated.
  12. 12 Remove and let them cool on a plate before serving.

Tips

Ensure the oil is not too hot to prevent the Khurma from browning too quickly without cooking through.
