Ingredients
| 1 cup | chana dal (split chickpeas) |
| 1 cup | urad dal (black gram) |
| 1 medium | onion, finely chopped |
| 2 | green chilies, finely chopped |
| 1 inch | ginger, grated |
| 1/4 teaspoon | asafoetida (hing) |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | salt |
| 1/4 cup | fresh coriander leaves, chopped |
| as needed | oil for frying |
Instructions
- 1 Wash and soak the chana dal and urad dal together in water for 4-5 hours or overnight.
- 2 Drain the soaked dals and grind them into a coarse paste without adding too much water.
- 3 In a mixing bowl, combine the dal paste with chopped onion, green chilies, grated ginger, asafoetida, cumin seeds, turmeric powder, red chili powder, and salt.
- 4 Mix well to form a thick batter.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Once the oil is hot, take small portions of the batter and shape them into small patties or vadas.
- 7 Carefully slide the vadas into the hot oil and fry until they turn golden brown and crispy on both sides.
- 8 Remove the fried vadas using a slotted spoon and drain excess oil on paper towels.
- 9 Garnish with fresh coriander leaves and serve hot.
Tips
Ensure the oil is hot enough before frying to make the vadas crispy.
