Ingredients

Poha 1 cup Poha
Potato 1 medium Potato , peeled and diced
Onion 1 medium Onion , finely chopped
oil 1 tbsp Oil
Mustard Seed 1 tsp Mustard Seed
Cumin 1 tsp Cumin , seeds
Peanut 2 tbsp Peanut
turmeric powder 1 tsp Turmeric powder
red chili powder 1 tsp Red chili powder
sugar 1 tsp Sugar
salt Salt , to taste
Cilantro 2 tbsp Cilantro , chopped
lemon juice 1 tbsp Lemon juice

Instructions

  1. 1 Rinse the poha in a colander under running water for a minute and let it drain completely.
  2. 2 Heat oil in a pan over medium heat and add mustard seeds.
  3. 3 Once the mustard seeds start to crackle, add cumin seeds and peanuts. Sauté until the peanuts are golden brown.
  4. 4 Add the chopped onions and sauté until they become translucent.
  5. 5 Add the diced potatoes and cook until they are tender.
  6. 6 Stir in the turmeric powder, red chili powder, sugar, and salt. Mix well.
  7. 7 Add the rinsed poha to the pan and mix gently to combine all ingredients.
  8. 8 Cook for another 2-3 minutes, stirring occasionally, until the poha is heated through.
  9. 9 Turn off the heat and add lemon juice and chopped coriander leaves. Mix well.
  10. 10 Serve hot, garnished with additional coriander leaves if desired.

Tips

For an authentic taste, you can add curry leaves along with the mustard seeds.
