Ingredients
| 1 cup | poha (flattened rice) |
| 1 medium | potato, peeled and diced |
| 1 medium | onion, finely chopped |
| 1 tbsp | oil |
| 1 tsp | mustard seeds |
| 1 tsp | cumin seeds |
| 2 tbsp | peanuts |
| 1 tsp | turmeric powder |
| 1 tsp | red chili powder |
| 1 tsp | sugar |
| — | salt to taste |
| 2 tbsp | fresh coriander leaves, chopped |
| 1 tbsp | lemon juice |
Instructions
- 1 Rinse the poha in a colander under running water for a minute and let it drain completely.
- 2 Heat oil in a pan over medium heat and add mustard seeds.
- 3 Once the mustard seeds start to crackle, add cumin seeds and peanuts. Sauté until the peanuts are golden brown.
- 4 Add the chopped onions and sauté until they become translucent.
- 5 Add the diced potatoes and cook until they are tender.
- 6 Stir in the turmeric powder, red chili powder, sugar, and salt. Mix well.
- 7 Add the rinsed poha to the pan and mix gently to combine all ingredients.
- 8 Cook for another 2-3 minutes, stirring occasionally, until the poha is heated through.
- 9 Turn off the heat and add lemon juice and chopped coriander leaves. Mix well.
- 10 Serve hot, garnished with additional coriander leaves if desired.
Tips
For an authentic taste, you can add curry leaves along with the mustard seeds.
