Ingredients
| 1.5 cups | thick poha (flattened rice) |
| 1 medium | potato, peeled and diced |
| 1 medium | onion, finely chopped |
| 1 tablespoon | peanuts |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida (hing) |
| 1 teaspoon | turmeric powder |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 tablespoon | lemon juice |
| — | salt to taste |
| 1 teaspoon | sugar |
| 1 tablespoon | grated fresh coconut (optional) |
Instructions
- 1 Rinse the poha under running water in a colander until it softens, then set aside to drain completely.
- 2 Heat oil in a pan over medium heat, add peanuts and fry until golden brown. Remove and set aside.
- 3 In the same pan, add mustard seeds and let them splutter. Then add cumin seeds and asafoetida.
- 4 Add chopped onions and sauté until they turn translucent.
- 5 Add diced potatoes, turmeric powder, and salt. Mix well and cover the pan. Cook until potatoes are tender.
- 6 Add the softened poha to the pan along with sugar and mix gently to combine all ingredients.
- 7 Cook for 2-3 minutes, stirring occasionally, until the poha is heated through.
- 8 Turn off the heat and add lemon juice, fried peanuts, and chopped coriander leaves. Mix well.
- 9 Garnish with grated coconut if using, and serve hot.
Tips
For added flavor, you can add green chilies or curry leaves while sautéing the onions.
