Ingredients

1.5 cups thick poha (flattened rice)
1 medium potato, peeled and diced
1 medium onion, finely chopped
1 tablespoon peanuts
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida (hing)
1 teaspoon turmeric powder
2 tablespoons fresh coriander leaves, chopped
1 tablespoon lemon juice
salt to taste
1 teaspoon sugar
1 tablespoon grated fresh coconut (optional)

Instructions

  1. 1 Rinse the poha under running water in a colander until it softens, then set aside to drain completely.
  2. 2 Heat oil in a pan over medium heat, add peanuts and fry until golden brown. Remove and set aside.
  3. 3 In the same pan, add mustard seeds and let them splutter. Then add cumin seeds and asafoetida.
  4. 4 Add chopped onions and sauté until they turn translucent.
  5. 5 Add diced potatoes, turmeric powder, and salt. Mix well and cover the pan. Cook until potatoes are tender.
  6. 6 Add the softened poha to the pan along with sugar and mix gently to combine all ingredients.
  7. 7 Cook for 2-3 minutes, stirring occasionally, until the poha is heated through.
  8. 8 Turn off the heat and add lemon juice, fried peanuts, and chopped coriander leaves. Mix well.
  9. 9 Garnish with grated coconut if using, and serve hot.

Tips

For added flavor, you can add green chilies or curry leaves while sautéing the onions.
