Ingredients
| 2 medium | potatoes |
| 2 tablespoons | ghee or oil |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 2 tablespoons | peanuts |
| 1 teaspoon | green chili, finely chopped |
| 1 teaspoon | sugar |
| — | salt to taste |
| 2 tablespoons | fresh coconut, grated |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 teaspoon | lemon juice |
Instructions
- 1 Peel and grate the potatoes using a medium-sized grater.
- 2 Rinse the grated potatoes under cold water to remove excess starch and drain well.
- 3 Heat ghee or oil in a pan over medium heat.
- 4 Add cumin seeds and mustard seeds, allowing them to splutter.
- 5 Add peanuts and sauté until they turn golden brown.
- 6 Stir in the chopped green chili and sauté for a minute.
- 7 Add the grated potatoes to the pan, stirring well to mix with the spices.
- 8 Season with sugar and salt, then cover and cook for 5-7 minutes, stirring occasionally.
- 9 Once the potatoes are cooked, add grated coconut and mix well.
- 10 Turn off the heat and add fresh coriander leaves and lemon juice.
- 11 Serve hot as a breakfast dish or snack.
Tips
For a more authentic taste, use desi ghee instead of oil.
