Ingredients

2 medium potatoes
2 tablespoons ghee or oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
2 tablespoons peanuts
1 teaspoon green chili, finely chopped
1 teaspoon sugar
salt to taste
2 tablespoons fresh coconut, grated
2 tablespoons fresh coriander leaves, chopped
1 teaspoon lemon juice

Instructions

  1. 1 Peel and grate the potatoes using a medium-sized grater.
  2. 2 Rinse the grated potatoes under cold water to remove excess starch and drain well.
  3. 3 Heat ghee or oil in a pan over medium heat.
  4. 4 Add cumin seeds and mustard seeds, allowing them to splutter.
  5. 5 Add peanuts and sauté until they turn golden brown.
  6. 6 Stir in the chopped green chili and sauté for a minute.
  7. 7 Add the grated potatoes to the pan, stirring well to mix with the spices.
  8. 8 Season with sugar and salt, then cover and cook for 5-7 minutes, stirring occasionally.
  9. 9 Once the potatoes are cooked, add grated coconut and mix well.
  10. 10 Turn off the heat and add fresh coriander leaves and lemon juice.
  11. 11 Serve hot as a breakfast dish or snack.

Tips

For a more authentic taste, use desi ghee instead of oil.
