Dogri festival fried wheat sweet — a thick, stiff dough of whole wheat flour kneaded with ghee, sugar, and crushed cardamom, shaped into thick discs or diamond shapes, and deep-fried in oil until hard, dry, and golden throughout. Stored in tins for weeks and eaten as a dry sweet snack at festivals and weddings. Dense, crumbly, richly ghee-flavoured, and very shelf-stable. A staple of Dogra festival sweets boxes alongside khajoor and rewri.

Ingredients

1 cup gram flour (besan)
1/2 cup sugar
1/4 cup ghee
1/4 teaspoon cardamom powder
2 tablespoons chopped almonds
2 tablespoons chopped cashews
2 tablespoons raisins
1/4 cup water

Instructions

  1. 1 Heat ghee in a pan on medium heat.
  2. 2 Add gram flour and roast it on low flame until it turns golden brown and releases a nutty aroma.
  3. 3 In a separate pan, combine sugar and water to make a syrup. Cook until it reaches a one-string consistency.
  4. 4 Add the cardamom powder to the syrup and mix well.
  5. 5 Pour the sugar syrup into the roasted gram flour and mix quickly to combine.
  6. 6 Add the chopped almonds, cashews, and raisins to the mixture and stir well.
  7. 7 Grease a plate with ghee and pour the mixture onto it.
  8. 8 Spread it evenly and let it cool slightly.
  9. 9 Cut into desired shapes and let it cool completely before serving.

Tips

Roasting the flour patiently on low heat is crucial for the best flavor.
