Ingredients
| 1 large | eggplant |
| 1 cup | besan (gram flour) |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | nigella seeds (kalonji) |
| 1 | salt to taste |
| 1 cup | water |
| 1 cup | mustard oil for frying |
Instructions
- 1 Wash the eggplant thoroughly and cut it into thin, round slices about 1/4 inch thick.
- 2 In a mixing bowl, combine besan, turmeric powder, red chili powder, nigella seeds, and salt.
- 3 Gradually add water to the dry ingredients, mixing well to form a smooth, lump-free batter.
- 4 Heat mustard oil in a frying pan over medium heat.
- 5 Dip each eggplant slice into the batter, ensuring it is well-coated.
- 6 Carefully place the coated slices into the hot oil and fry until golden brown and crispy on both sides.
- 7 Remove the fried beguni from the oil and drain on paper towels to remove excess oil.
- 8 Serve hot as a snack or a side dish.
Tips
For a crispier texture, ensure the oil is hot enough before frying. Serve immediately for best taste.
