Ingredients
| 250 grams | bendakaya (okra) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | urad dal |
| 1 teaspoon | chana dal |
| 2 tablespoons | peanuts |
| 1 pinch | asafoetida |
| 1 sprig | curry leaves |
| 2 | green chilies, slit |
| 1 teaspoon | red chili powder |
| 0.5 teaspoon | turmeric powder |

Instructions
- 1 Wash the bendakaya (okra) thoroughly and pat dry with a clean kitchen towel.
- 2 Cut the okra into thin round slices and set aside.
- 3 Heat oil in a pan over medium heat.
- 4 Add mustard seeds and allow them to splutter.
- 5 Add cumin seeds, urad dal, chana dal, and peanuts. Fry until the dals turn golden brown.
- 6 Add a pinch of asafoetida, curry leaves, and slit green chilies. Sauté for a few seconds.
- 7 Add the sliced okra to the pan and mix well.
- 8 Sprinkle turmeric powder and salt over the okra and stir to combine.
- 9 Cook on medium heat, stirring occasionally, until the okra is cooked and slightly crispy.
- 10 Add red chili powder and mix well. Cook for another 2 minutes.
- 11 Turn off the heat and serve hot.
Tips
Ensure the okra is completely dry before slicing to avoid it becoming slimy during cooking.
