Ingredients

1 cup besan (gram flour)
1/2 cup ghee
3/4 cup powdered sugar
1/4 teaspoon cardamom powder
2 tablespoons chopped nuts (cashews, almonds)
1 tablespoon raisins
pinch of saffron strands (optional)

Instructions

  1. 1 Heat ghee in a heavy-bottomed pan on low flame.
  2. 2 Add besan to the ghee and roast on low flame, stirring continuously to avoid burning.
  3. 3 Continue roasting until the besan turns golden brown and releases a nutty aroma, approximately 15-20 minutes.
  4. 4 Add chopped nuts and raisins to the roasted besan and mix well.
  5. 5 Remove the pan from heat and allow the mixture to cool slightly.
  6. 6 Once the mixture is warm, add powdered sugar, cardamom powder, and saffron strands, if using.
  7. 7 Mix thoroughly until the sugar is well incorporated.
  8. 8 Take small portions of the mixture and shape them into round ladoos using your palms.
  9. 9 Allow the ladoos to cool completely before serving or storing.

Ensure to roast the besan on low flame to avoid any raw taste and achieve a rich flavor.
