Ingredients

1 cup besan (gram flour)
1 cup whole wheat flour
1 medium onion, finely chopped
1 small tomato, finely chopped
2 tablespoons fresh coriander leaves, chopped
1 teaspoon carom seeds (ajwain)
1 teaspoon red chili powder
1 teaspoon coriander powder
0.5 teaspoon turmeric powder
salt to taste
2 tablespoons oil
as needed water

Instructions

  1. 1 In a large mixing bowl, combine besan, whole wheat flour, chopped onion, chopped tomato, coriander leaves, carom seeds, red chili powder, coriander powder, turmeric powder, and salt.
  2. 2 Add oil to the mixture and mix well.
  3. 3 Gradually add water and knead into a soft dough. The dough should be pliable but not sticky.
  4. 4 Divide the dough into small balls of equal size.
  5. 5 Roll each ball into a flat, round disc using a rolling pin, dusting with flour as needed to prevent sticking.
  6. 6 Heat a tawa or flat pan over medium heat.
  7. 7 Place the rolled roti on the hot tawa and cook for about 1-2 minutes until small bubbles form on the surface.
  8. 8 Flip the roti and cook the other side until golden brown spots appear.
  9. 9 Apply a little oil on both sides and cook until the roti is evenly cooked and has a nice golden color.
  10. 10 Repeat the process with the remaining dough balls.
  11. 11 Serve hot with yogurt or pickle.

Tips

For a spicier version, add finely chopped green chilies to the dough.
