Ingredients
| 1 cup | chana dal (split chickpeas) |
| 1 cup | urad dal (black gram) |
| 1 medium | onion, finely chopped |
| 2 | green chilies, finely chopped |
| 1 teaspoon | cumin seeds |
| 1/2 teaspoon | turmeric powder |
| 1/2 teaspoon | red chili powder |
| 1/4 teaspoon | asafoetida (hing) |
| 1 tablespoon | ginger, grated |
| 1 handful | coriander leaves, chopped |
| — | salt to taste |
| — | oil for deep frying |
Instructions
- 1 Wash and soak the chana dal and urad dal together in water for 4-5 hours or overnight.
- 2 Drain the soaked dals and grind them into a coarse paste using minimal water.
- 3 Transfer the paste to a mixing bowl and add chopped onions, green chilies, cumin seeds, turmeric powder, red chili powder, asafoetida, grated ginger, chopped coriander leaves, and salt.
- 4 Mix all the ingredients well to form a thick batter.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Once the oil is hot, drop small portions of the batter into the oil using your fingers or a spoon.
- 7 Fry the bhajiyas until they are golden brown and crisp on all sides.
- 8 Remove them from the oil and drain on paper towels to remove excess oil.
- 9 Serve hot with chutney or sauce of your choice.
Tips
Ensure the oil is hot enough before frying to prevent the bhajiyas from absorbing too much oil.
