Ingredients

2 medium eggplants
1 large onion, finely chopped
2 tablespoons oil
2 cloves garlic, minced
1 inch ginger, minced
1 medium tomato, finely chopped
2 tablespoons fresh coriander leaves, chopped
1 teaspoon cumin seeds
1 teaspoon red chili powder
0.5 teaspoon turmeric powder
salt to taste

Instructions

  1. 1 Roast the eggplants over an open flame or in an oven until the skin is charred and the flesh becomes soft.
  2. 2 Allow the eggplants to cool, then peel off the charred skin and mash the flesh in a bowl.
  3. 3 Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  4. 4 Add finely chopped onions and sauté until they turn golden brown.
  5. 5 Add minced garlic and ginger, and sauté for another minute.
  6. 6 Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes turn soft and the oil separates.
  7. 7 Add the mashed eggplant to the pan and mix well with the spices.
  8. 8 Cook the mixture for about 5-7 minutes, stirring occasionally.
  9. 9 Garnish with fresh coriander leaves before serving.

Tips

Roasting the eggplants on an open flame gives a smoky flavor to the dish.
