Ingredients
| 2 medium | eggplants |
| 1 large | onion, finely chopped |
| 2 tablespoons | oil |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 1 medium | tomato, finely chopped |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | red chili powder |
| 0.5 teaspoon | turmeric powder |

Instructions
- 1 Roast the eggplants over an open flame or in an oven until the skin is charred and the flesh becomes soft.
- 2 Allow the eggplants to cool, then peel off the charred skin and mash the flesh in a bowl.
- 3 Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- 4 Add finely chopped onions and sauté until they turn golden brown.
- 5 Add minced garlic and ginger, and sauté for another minute.
- 6 Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes turn soft and the oil separates.
- 7 Add the mashed eggplant to the pan and mix well with the spices.
- 8 Cook the mixture for about 5-7 minutes, stirring occasionally.
- 9 Garnish with fresh coriander leaves before serving.
Tips
Roasting the eggplants on an open flame gives a smoky flavor to the dish.
