Ingredients
| 250 grams | bhendi (okra) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 | onion, finely chopped |
| 2 tablespoons | peanuts, roasted and coarsely ground |
| 2 tablespoons | dry coconut, grated |
| 1 teaspoon | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| 1 teaspoon | amchur (dried mango powder) |
| 1 | green chili, finely chopped |
| 1 | lemon juice |
| 1 | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Wash the bhendi thoroughly and pat them dry with a kitchen towel. Trim the ends and make a slit in each bhendi without cutting them into halves.
- 2 In a bowl, mix together the peanuts, dry coconut, red chili powder, turmeric powder, coriander powder, garam masala, amchur, salt, and lemon juice to form the stuffing.
- 3 Stuff each bhendi with the prepared mixture and set aside.
- 4 Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
- 5 Add the chopped onion and green chili, sauté until the onion turns translucent.
- 6 Carefully add the stuffed bhendi to the pan, gently stirring to coat them with the onion mixture.
- 7 Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the bhendi is cooked and tender.
- 8 Garnish with fresh coriander leaves before serving.
Tips
Ensure the bhendi is completely dry before stuffing to prevent it from becoming slimy.
