Ingredients

250 grams bhindi (okra)
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 medium onion, finely chopped
2 teaspoons ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon amchur (dried mango powder)
1 tablespoon fresh coriander leaves, chopped

Instructions

  1. 1 Wash the bhindi thoroughly and pat dry with a clean kitchen towel.
  2. 2 Trim the ends and cut the bhindi into 1-inch pieces.
  3. 3 Heat oil in a pan over medium heat.
  4. 4 Add mustard seeds and let them splutter.
  5. 5 Add cumin seeds and asafoetida, sauté for a few seconds.
  6. 6 Add the chopped onion and sauté until golden brown.
  7. 7 Stir in the ginger-garlic paste and sauté until the raw smell disappears.
  8. 8 Add turmeric powder, red chili powder, and coriander powder. Mix well.
  9. 9 Add the chopped bhindi and mix to coat the pieces with the spices.
  10. 10 Cook on medium heat, stirring occasionally, until the bhindi is cooked and tender.
  11. 11 Add amchur powder and salt to taste. Mix well and cook for another 2-3 minutes.
  12. 12 Garnish with fresh coriander leaves before serving.

Tips

Ensure the bhindi is completely dry before cooking to avoid it becoming slimy.
