Ingredients
| 250 grams | bhindi (okra) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 medium | onion, finely chopped |
| 2 teaspoons | ginger-garlic paste |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | amchur (dried mango powder) |
| 1 tablespoon | fresh coriander leaves, chopped |
Instructions
- 1 Wash the bhindi thoroughly and pat dry with a clean kitchen towel.
- 2 Trim the ends and cut the bhindi into 1-inch pieces.
- 3 Heat oil in a pan over medium heat.
- 4 Add mustard seeds and let them splutter.
- 5 Add cumin seeds and asafoetida, sauté for a few seconds.
- 6 Add the chopped onion and sauté until golden brown.
- 7 Stir in the ginger-garlic paste and sauté until the raw smell disappears.
- 8 Add turmeric powder, red chili powder, and coriander powder. Mix well.
- 9 Add the chopped bhindi and mix to coat the pieces with the spices.
- 10 Cook on medium heat, stirring occasionally, until the bhindi is cooked and tender.
- 11 Add amchur powder and salt to taste. Mix well and cook for another 2-3 minutes.
- 12 Garnish with fresh coriander leaves before serving.
Tips
Ensure the bhindi is completely dry before cooking to avoid it becoming slimy.
