Ingredients

1 cup grated pumpkin
1 cup jaggery
1 1/2 cups whole wheat flour
1/4 teaspoon cardamom powder
1/4 teaspoon salt
as needed water
as needed oil for deep frying

Instructions

  1. 1 In a pan, combine the grated pumpkin and jaggery. Cook over medium heat until the jaggery melts and blends with the pumpkin.
  2. 2 Add cardamom powder and salt to the mixture, stirring well. Cook until the mixture thickens slightly, then remove from heat and let it cool.
  3. 3 In a mixing bowl, combine the cooled pumpkin-jaggery mixture with whole wheat flour. Knead into a soft dough, adding water if necessary.
  4. 4 Divide the dough into small balls and roll each ball into a small disc, about 3 inches in diameter.
  5. 5 Heat oil in a deep frying pan over medium heat. Once hot, fry the discs until golden brown on both sides.
  6. 6 Remove the fried gharge and drain on paper towels to remove excess oil.

Tips

Ensure the pumpkin mixture is completely cooled before adding flour to prevent the dough from becoming sticky.
