Ingredients

2 cups pumpkin, peeled and cubed
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon jaggery
1 teaspoon salt
2 tablespoons freshly grated coconut
2 tablespoons chopped cilantro

Instructions

  1. 1 Heat oil in a pan over medium heat.
  2. 2 Add mustard seeds and let them splutter.
  3. 3 Add cumin seeds and asafoetida, sauté for a few seconds.
  4. 4 Add the cubed pumpkin and stir well.
  5. 5 Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly.
  6. 6 Cover the pan and cook on low heat until the pumpkin is tender, stirring occasionally.
  7. 7 Add jaggery and mix well until it dissolves.
  8. 8 Garnish with freshly grated coconut and chopped cilantro before serving.

Tips

Adjust the amount of jaggery to balance the sweetness with the spice.
