Ingredients
| 2 cups | pumpkin, peeled and cubed |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | jaggery |
| 1 teaspoon | salt |
| 2 tablespoons | freshly grated coconut |
| 2 tablespoons | chopped cilantro |
Instructions
- 1 Heat oil in a pan over medium heat.
- 2 Add mustard seeds and let them splutter.
- 3 Add cumin seeds and asafoetida, sauté for a few seconds.
- 4 Add the cubed pumpkin and stir well.
- 5 Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly.
- 6 Cover the pan and cook on low heat until the pumpkin is tender, stirring occasionally.
- 7 Add jaggery and mix well until it dissolves.
- 8 Garnish with freshly grated coconut and chopped cilantro before serving.
Tips
Adjust the amount of jaggery to balance the sweetness with the spice.
