Ingredients
| 1 cup | all-purpose flour |
| 1 cup | semolina |
| 1 cup | grated coconut |
| 1 medium | onion, finely chopped |
| 2 tablespoons | coriander leaves, finely chopped |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | asafoetida |
| 1 teaspoon | salt |
| 2 tablespoons | oil |
| as needed | water |
Instructions
- 1 In a mixing bowl, combine all-purpose flour, semolina, grated coconut, chopped onion, coriander leaves, red chili powder, turmeric powder, mustard seeds, cumin seeds, asafoetida, and salt.
- 2 Heat 2 tablespoons of oil and add it to the flour mixture.
- 3 Mix everything well and gradually add water to form a firm dough. The dough should not be too soft.
- 4 Divide the dough into small lemon-sized balls.
- 5 Roll each ball into a small disc, about 3-4 inches in diameter.
- 6 Heat oil in a deep frying pan over medium heat.
- 7 Once the oil is hot, gently slide in the rolled discs one at a time.
- 8 Fry until they puff up and turn golden brown on both sides.
- 9 Remove from oil and drain on paper towels to remove excess oil.
- 10 Serve hot with coconut chutney or any side dish of choice.
Tips
Ensure the oil is hot enough before frying to get crispy and puffed biscuit rottis.
