Ingredients

1 cup all-purpose flour
1 cup semolina
1 cup grated coconut
1 medium onion, finely chopped
2 tablespoons coriander leaves, finely chopped
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon asafoetida
1 teaspoon salt
2 tablespoons oil
as needed water

Instructions

  1. 1 In a mixing bowl, combine all-purpose flour, semolina, grated coconut, chopped onion, coriander leaves, red chili powder, turmeric powder, mustard seeds, cumin seeds, asafoetida, and salt.
  2. 2 Heat 2 tablespoons of oil and add it to the flour mixture.
  3. 3 Mix everything well and gradually add water to form a firm dough. The dough should not be too soft.
  4. 4 Divide the dough into small lemon-sized balls.
  5. 5 Roll each ball into a small disc, about 3-4 inches in diameter.
  6. 6 Heat oil in a deep frying pan over medium heat.
  7. 7 Once the oil is hot, gently slide in the rolled discs one at a time.
  8. 8 Fry until they puff up and turn golden brown on both sides.
  9. 9 Remove from oil and drain on paper towels to remove excess oil.
  10. 10 Serve hot with coconut chutney or any side dish of choice.

Ensure the oil is hot enough before frying to get crispy and puffed biscuit rottis.
