Ingredients

2 cups rice flour
1 cup water
1 teaspoon salt
1 tablespoon oil
1 cup finely chopped onions
2 tablespoons finely chopped green chilies
1 cup finely chopped coriander leaves
1 cup grated carrot
salt to taste

Instructions

  1. 1 In a mixing bowl, combine rice flour and salt.
  2. 2 Gradually add water to the rice flour while mixing to form a smooth, soft dough.
  3. 3 Add the chopped onions, green chilies, coriander leaves, and grated carrot to the dough. Mix well.
  4. 4 Divide the dough into equal portions and shape each into a ball.
  5. 5 Grease a plastic sheet or banana leaf with a little oil.
  6. 6 Place a dough ball on the sheet and gently flatten it with your fingers to form a thin disc.
  7. 7 Heat a tawa or flat pan over medium heat.
  8. 8 Carefully transfer the flattened roti onto the hot tawa.
  9. 9 Cook the roti on one side until small bubbles appear, then flip it over.
  10. 10 Drizzle a little oil around the edges and cook until both sides are golden brown.
  11. 11 Repeat the process with the remaining dough balls.
  12. 12 Serve hot with chutney or curry of your choice.

Tips

For added flavor, you can incorporate finely chopped curry leaves into the dough.
