The Bohri community is renowned for elaborate falooda preparations served at Eid gatherings and summer iftar tables.

Ingredients

1/4 cup falooda sev (vermicelli)
2 tablespoons basil seeds (sabja)
2 cups milk
2 tablespoons sugar
1 teaspoon rose syrup
1 cup vanilla ice cream
2 tablespoons chopped nuts (almonds, pistachios)
ice cubes

Instructions

  1. 1 Soak the basil seeds in water for about 15 minutes until they swell up and become gelatinous.
  2. 2 Boil the falooda sev in water for 5-7 minutes until soft, then drain and set aside.
  3. 3 In a saucepan, heat the milk and add sugar. Stir until the sugar dissolves completely. Let it cool.
  4. 4 In serving glasses, add a layer of soaked basil seeds.
  5. 5 Add a layer of cooked falooda sev over the basil seeds.
  6. 6 Pour the sweetened milk into the glasses.
  7. 7 Add a scoop of vanilla ice cream on top of each glass.
  8. 8 Drizzle rose syrup over the ice cream.
  9. 9 Garnish with chopped nuts and add a few ice cubes if desired.
  10. 10 Serve immediately with a spoon and straw.

Tips

For a richer taste, use full-fat milk and chill it before serving.
