Bohri Muthia Gosht
Herb-and-minced-meat dumplings cooked in a curry — 'muthia' (fist-shaped) balls of spiced mince mixed with fresh fenugreek or coriander, poached in a light gravy. A distinctly Bohri preparation that uses every part of the meat with economy and flavour.

Ingredients
300 grams | Mutton , cut into pieces |
1 cup | Gram Flour |
2 tablespoons | Ginger-garlic paste |
1 teaspoon | Red chili powder |
1 teaspoon | Turmeric powder |
1 teaspoon | Coriander powder |
1 teaspoon | Cumin , seeds |
2 tablespoons | Oil |
1 cup | Yogurt |
1 medium | Onion , finely chopped |
2 green chilies | Finely chopped |
1 bunch | Cilantro , chopped |
1 bunch | Mint , chopped |
— | Salt , to taste |
1 teaspoon | Garam masala |
1 cup | Water |
Instructions
- 1 In a bowl, mix gram flour with a pinch of salt and water to form a smooth batter.
- 2 Heat oil in a pan and add cumin seeds. Let them splutter.
- 3 Add chopped onions and sauté until golden brown.
- 4 Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- 5 Add mutton pieces, red chili powder, turmeric powder, coriander powder, and salt. Cook for about 10 minutes, stirring occasionally.
- 6 Add yogurt to the mutton, mix well, and cook for another 5 minutes.
- 7 Pour in water, cover the pan, and let the mutton simmer until it is tender.
- 8 In a separate pan, heat a little oil and pour in the gram flour batter to make small dumplings (muthias). Cook them until they are golden brown and set aside.
- 9 Once the mutton is cooked, add the muthias to the curry along with green chilies, chopped coriander, and mint leaves.
- 10 Sprinkle garam masala over the dish and let it simmer for another 5 minutes to allow the flavors to meld.
- 11 Serve hot with rice or bread.
Tips
For a richer flavor, you can add a tablespoon of ghee along with the oil when cooking the mutton.
