Ingredients
| 1 cup | Bora Saul (sticky rice) |
| 1/2 cup | jaggery |
| 1 cup | water |
| 1/4 teaspoon | cardamom powder |
| 1 tablespoon | grated coconut |
| — | banana leaves for wrapping |
Instructions
- 1 Wash the Bora saul thoroughly and soak it in water for 4-5 hours or overnight.
- 2 Drain the soaked rice and grind it into a coarse paste using minimal water.
- 3 In a pan, dissolve the jaggery in 1 cup of water over low heat, stirring continuously until it melts completely.
- 4 Add the cardamom powder and grated coconut to the jaggery syrup and mix well.
- 5 Combine the jaggery mixture with the rice paste, ensuring a thick batter-like consistency.
- 6 Cut the banana leaves into rectangular pieces and soften them by lightly heating over an open flame.
- 7 Place a portion of the rice-jaggery mixture onto each banana leaf piece and fold it securely.
- 8 Steam the wrapped pithas in a steamer for about 30-35 minutes until they are cooked through.
- 9 Remove from the steamer and let them cool slightly before serving.
Tips
Ensure the banana leaves are soft to avoid tearing while wrapping the pithas.
